Delicious, whole-grain homemade granola, full of nuts and fruit. Perfect to pair with yogurt and fruit, or sprinkling over ice cream.

Instructions
Preheat oven to 400°.
Place oats, walnuts, coconut, cinnamon, and salt in a large mixing bowl. Stir well.
Stir together melted butter, hot water, and brown sugar together in a small bowl. Pour over dry ingredients and stir very well.
Spread on two baking sheets and bake for 20-25 minutes, or until golden brown.
Stir craisins into granola. Cool completely. Store in airtight container for up to two weeks, or in a ziploc bag in freezer.
Notes
Total recipe makes approx 15 cups. One serving is 1/2 cup of granola.
