Crockpot Beef Roast

This Crockpot Beef Roast is so simple to prepare in the morning, when you come home at the end of the day your house smells amazing, thanks to the wonderful herbs and spices. The beef roast will be so tender, it will be falling apart!

Crockpot Beef Roast Recipe

For the best flavor;  sear the beef roast well on all sides. Just put a bit of butter in the frying pan, and fry each side about 3 minutes over med-high heat.

Then place the chuck roast in the crockpot, and arrange some potatoes, onions, and carrots around the edges. Sprinkle with spices and herbs, and pour some beef broth over the top. Turn it on low and leave it alone for 8-10 hours. It really is that simple!

When you get home that evening, carefully lift the beef onto a serving tray and slice - or just pull it into chunks. This is rib-sticking goodness, easier than drive-through! 

FAQ for slow cooker roast beef:

What kind of beef roast should I use? I like to use chuck roast, but round roast or brisket are also really good cuts of beef for this recipe. 

Why should I cook beef roast in the crockpot? Beef roast is made tender by cooking it low and slow. The crockpot does this perfectly, and you can leave the house while it's cooking! Super handy for ranch wives on working days. The oven works great too, but sometimes I just want to 'set it and forget it'.

Why do I need to brown the roast? Browning, or searing meat, produces a caramelized flavor and beautiful appearance.

Can I freeze leftover roast beef? Yes. Roast beef freezes well. Place in a freezer-safe container and label. Freeze up to three months. (If you freeze potatoes, the texture may change.)

Tips for roast:

You can use the broth for gravy, just strain it off and place it in a pan on the stovetop. Mix several tablespoons of flour with a half cup of water, and stir til smooth. Whisk the flour mixture into the broth, and simmer till thickened.

If you have leftovers; use them to make a small beef stew the next day.

This slow cooker roast beef makes great shredded beef sandwiches! When it is cooked, shred with two forks, stir in some BBQ sauce, and serve on homemade rolls.

Ingredients
  

  • 3-4 lb boneless beef roast chuck or round
  • 6 small potatoes
  • 4 carrots peeled
  • 1 onion quartered
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon parsley
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Instructions
 

  • Sear beef roast approximately 3 minutes per side, in a hot skillet over med-high heat.
  • Place roast in crockpot.
  • Place vegetables around roast.
  • Pour beef broth over roast.
  • Sprinkle herbs over the roast.
  • Cook for 8-10 hours on low, or 6-7 hours on high.

Notes

If you prefer the vegetables more firm, just add them halfway through the cooking time.

    Love this recipe. Glad to be able to adjust for amount of people eating. Huge help!
    I was wondering if possible to make in Dutch ovens, as I need to make for 12 and have various sizes of crock pots, but 1 large enough for maybe 6 people and prefer not to but another large one, lol.

      Glad it’s helpful! I sometimes make it in my Dutch oven. If you make it in the oven, just remember that LOW is 200 degrees and HIGH is 300 degrees. The times should be the same. 😊
