Baked Oatmeal Recipe

Baked Oatmeal is a wonderful breakfast recipe that is filling and full of fiber. It is a welcome change from regular cooked oatmeal. Baked oats are buttery, sweet, and a bit crumbly. My kids love these warm breakfast oats. We pour milk over it, and top with fruit. But some of my kids eat it without milk, and it's good like that, too!

Baked Oatmeal Recipe

This recipe is so simple, you cannot mess it up! First, place the butter, eggs, sugar, milk, and vanilla into a mixing bowl, and stir.

Next, add the oats and baking powder and salt. Stir again. Pour into greased 7x11 pan, and bake in preheated oven for 20 minutes at 400.

It will look mostly dry on top when it is finished baking, and the edges will be golden brown. It does not fall like a cake, so you don't have to be so careful with it. You can stick a toothpick into the center and if it is mostly clean when you remove it, then the oatmeal is ready.

How do you eat baked oatmeal?

I like to eat it with milk and fruit. Sometimes I like a big spoonful of yogurt on top. Some people prefer to eat it plain. Any way you eat it - it's good!

You can add nuts, raisins or fruit to the oatmeal before you bake it for some interesting and delicious flavors! My sister adds chocolate chips to her oatmeal. My kids like Aunt Jane's oatmeal the best! Haha! (of course they do!) 

How to store leftover baked oatmeal

Place in airtight container and store in the fridge up to three days. To reheat, simply warm in microwave or oven.

Can I prepare baked oatmeal ahead of time?

Yes! Mix the batter in the evening, cover with plastic wrap and store in the fridge overnight. In the morning, preheat the oven and bake as directed.

Ingredients
  

  • 1 cup milk
  • 1 teaspoon vanilla
  • 6 Tablespoons butter melted
  • 2 eggs
  • ¾ cup brown sugar
  • 3 cups old fashioned oats
  • 1 teaspoon cinnamon
  • ¾ teaspoon salt
  • 2 teaspoons baking powder

Instructions
 

  • Preheat oven to 400°.
  • Place milk, vanilla, butter, eggs, and brown sugar in a mixing bowl andf stir well.
  • Add oatmeal, salt, and baking powder and stir again.
  • Pour into greased baking dish. I use a 7x11 inch pan. You may ue any 2 quart baking dish.
  • Bake at 400° for 20 minutes or until the oatmeal is golden brown around the edges, and a toothpick inserted comes out mostly clean.

Notes

You may use quick oats if you prefer. The baked oatmeal will have a more cake-like texture with quick oats, while using old-fashioned oats makes it more crumbly. 
You may substitute white sugar or other sweetener. If you use white sugar or honey, decrease amount to 1/2 cup. 
Mix in some extras for added flavor:  Chopped nuts, chocolate chips, raisins or chopped dates are delicious. I add about 3/4 cup of nuts or other add-in.

    This is delicious ! My grands love baked oatmeal at nanny’s and this is a hit. I did make it with quick oats and it was just as delicious. And added blueberries to the mix yummy.
