Easy Butterscotch Squares Recipe (Blondies Bars)

This easy Butterscotch Squares Recipe is also known as blonde brownies, or butterscotch chip bars. My family prefers the butterscotch chips to chocolate chips. This is one of their favorite recipes!

How to make butterscotch squares

First, put the eggs into a mixing bowl and beat well with a whisk or electric mixer till frothy.

Next, add the brown sugar and beat well, again. Add the oil and vanilla and mix, then add flour, baking powder, and salt. Mix well.

Stir in the butterscotch chips and spread into a 9x13 baking pan. The batter will be very thick, be sure to spread it into all corners of the pan so it bakes evenly.

Butterscotch bars add-ins

You can stir in some add-ins to bump these bars up a notch! I like to add chopped pecans, or walnuts, slivered almonds or any nut you prefer. Occasionally, I use chocolate chips instead of butterscotch. You can also add white chocolate chips.

Baking tips for butterscotch squares

These cookie bars are a bit tricky on the baking time. Generally, they need to bake at 350 for about 20 minutes. But that can vary depending on your oven temp or the altitude, etc. 

The best way to do it is to bake them for 15 minutes, then take a peek at them, and set the timer for 5 minutes at a time until they are done. 

They will puff up in the center, then fall down very flat. You want to take them out just before they fall, for a gooey bar. But if you prefer your butterscotch bars more chewy, then take them out just after they fall. You may need to bake them a time or two to know how your family prefers them!

I like to take them out early, and Ley them fully cool. But if you wait till they fall flat, then you might want to cut them while they are still warm, because it will be easier then. Either way, they are delicious! They disappear quickly at my house!

Ingredients
  

  • 2 eggs beaten
  • 1½ cups brown sugar
  • ⅔ cup oil
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1½ cups flour all-purpose
  • 1½ teaspoons baking powder
  • 1 cup butterscotch chips
  • ½ cup pecans optional

Instructions
 

  • Place eggs in a mixing bowl and beat till foamy.
  • Add brown sugar to the beaten eggs and beat again.
  • Add oil and vanilla and beat well.
  • Add flour, salt, and baking powder, mix well. Mixture will be thick.
  • Stir in butterscotch chips and pecans, if using.
  • Spray 9x13 pan with nonstick spray, and spread batter into pan. Spread the batter evenly into all corners.
  • Bake at 350 for 15-20 minutes, or until edges are golden brown and center starts to fall flat. Remove from oven and cool before eating.

Notes

You can substitute chocolate chips or white chips, if desired. 
Pecans are a wonderful addition, I also use sliced almonds or walnuts too. 
Take them out as soon as they start to sink, for gooey squares, or wait till they have fallen flat and bake a bit longer for chewy bars. The center will be more gooey and the edges will get more chewy.
