Fried Deer Tenderloin (gluten-free option)

Try this quick, tasty method for those delicious pieces of tenderloin! Fried Deer Tenderloin is a mouth-watering meal for 2 or 3 people, and can be made in just a few minutes. These steak bites will melt in your mouth, and there's just never enough to go around.

How to make Fried Deer Tenderloin

I used two deer tenderloins, sliced, for this recipe, but you can use as many or few as you have on hand. If you use elk tenderloin, you will have enough to feed 4-6 people, depending how hungry they are! You can also use backstrap (loin), or any steak available. Just cut into bite-size pieces if using larger steaks.

Heat a cast iron skillet over medium-high heat.  While it's heating, pour the half & half into a small dish. Measure the flour and seasoning into another small dish.

When the skillet is hot, add enough beef tallow (or other fat) til it is 1/4 inch deep. Dip the tenderloin pieces into the cream, then roll in flour mixture. Place carefully into hot fat and fry 1-2 minutes per side, or until thermometer inserted in center reads 145. I usually leave it on the first side till the blood starts to seep out, like in the photo below. Then I turn it.

Remove from fat and place on several layers of paper towel to drain. Serve hot.

Ingredients
  

  • 2 venison tenderloin
  • ½ cup beef tallow or oil
  • ¾ cup flour can use gluten free all-purpose blend
  • 1 Tablespoon steak seasoning
  • ½ cup half & half can use milk or cream

Instructions
 

  • Slice tenderloin into small pieces.
  • Mix steak seasoning with flour in a small bowl.
  • Heat beef tallow in a cast iron pan over medium-high heat.
  • Dip tenderloin pieces in half & half, then roll in flour mixture. Place meat carefully in hot fat.
  • Fry meat 1 or 2 minutes on each side, or until an instant read thermometer reads 145.
  • Remove from pan and place on several layers of paper towel to drain. Serve hot.

Notes

Use your favorite steak seasoning to mix with the flour. If you don't have a premade blend, try using: 1 teaspoon salt, 1 teaspoon black pepper, 1/2 teaspoon garlic, 1/2 teaspoon onion salt, 1/2 teaspoon lemon/pepper. 
You can use all-purpose flour, OR if gluten sensitive, you can use an all-purpose GF blend and it works just fine! 
Use any venison steak you prefer. Elk tenderloin, backstrap, etc.
