Tomato and Cucumber Salad

This tasty tomato and cucumber salad is the perfect summer side dish to accompany your backyard BBQ. The easy homemade marinade is a flavorful balance of tangy and sweet.

Use fresh produce

For best flavor, I like to use garden-ripe tomatoes and cucumbers. If you don't have a garden, stop by a local Farmer's Market to pick out some fresh produce. It will taste so much better!

Chop veggies small

I like to chop the vegetables fairly small. It makes the salad easier to eat, and lets the marinade distribute better.  I slice all the veggies about 1/4 - 1/3 inch thick.

Stir the marinade

The marinade is very easy to prepare. Just add all ingredients to a small dish and stir till sugar is dissolved. Pour the marinade over the vegetables, and stir well.

Let salad marinade

The tomato and cucumber salad tastes best if it marinades for 2 hours before serving. Leftovers keep just fine in the fridge till the following day.

Ingredients
  

  • 3 large tomatoes
  • 3 medium cucumbers
  • 1/2 medium onion
  • 3 TBL olive oil
  • 3 TBL sugar
  • 3 TBL Vinegar
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Slice cucumbers, tomatoes, ad onions into 1/4-inch slices or small chunks.
  • Stir together the oil, sugar, vinegar, salt and pepper until sugar is dissolved.
  • Pour marinade over the vegetables and stir well. Cover and let rest in the fridge for 2 hours before serving.
