Key Ingredients

Tomatoes. For best flavor, I like to use garden-ripe tomatoes. If you don't have a garden, stop by a local Farmer's Market to pick out some fresh produce. It will taste so much better!
Cucumbers. I purchase either the mini cukes in a bag at the grocery store, or the long English cucumbers. I find these two types to be crunchy and seedless.
Onion. I use yellow or red onions. Use whatever kid you have. Green onions are tasty, too!
Olive oil. Whatever you use for cooking works fine. I like the cold-pressed organic but I use cheaper brands too. You can use any mild cooking oil if you don't have olive oil.

How to make Cucumber Tomato Onion Salad

  1. Step 1: Slice or chop all vegetables. I like to chop the vegetables fairly small. It makes the salad easier to eat, and lets the marinade distribute better.  I slice all the veggies about 1/4 - 1/3 inch thick.

  1. Step 2: The dressing is very easy to prepare. Just add all ingredients to a small dish and stir till sugar is dissolved. Pour the dressing over the vegetables, and stir well.

  1. Step 5: The cucumber tomato salad tastes best if it marinades for 1-2 hours before serving. Leftovers keep just fine in the fridge till the following day.

  • The dressing is more of a marinade. You stir it occasionally the first hour, so every piece gets coated several times to soak up that flavor. But most of the dressing sits on the bottom of the dish, so no worries of there's fewer vegetables than the recipe calls for.

Ingredients
  

  • 3 large tomatoes
  • 3 medium cucumbers
  • 1/2 medium onion
  • 3 TBL olive oil
  • 3 TBL sugar
  • 3 TBL Vinegar
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Slice cucumbers, tomatoes, ad onions into 1/4-inch slices or small chunks.
  • Stir together the oil, sugar, vinegar, salt and pepper until sugar is dissolved.
  • Pour marinade over the vegetables and stir well. Cover and let rest in the fridge for 2 hours before serving.
