Chicken Thighs. Use bone-in or boneless. DO NOT use chicken breast, as they will cook too fast and be too dry. Thighs create a delicious broth that will help cook the vegetables.

Italian Dressing mix. Any brand will work. Just the dry mix - not the prepared dressing.

How to make easy chicken crockpot dinner

- Step 1: Place the chicken in one side of the crockpot. You have to make two layers of chicken, and squish the pieces tightly together.
- Step 2: Carefully place the green beans in one corner, and add the potatoes in the other corner. It will be full! Don't worry - the chicken and beans shrink a lot during cooking.
- Step 3: Then, sprinkle the packet of Italian seasoning over the chicken and vegetables. Lift the top pieces of chicken and sprinkle some seasoning on the bottom layer.
- Step 4: Put the lid on and cook on high for 4 hours. The chicken will make it's own juice - no need for liquid, I promise!

Tips for Chicken and green beans crockpot
I like to use the baby potatoes, but you can use any potatoes. Just chunk them up and place them in the crockpot.
I have used frozen and fresh green beans. Either one works just fine. You can also use carrots instead of green beans.
Boneless chicken thighs are my favorite, but bone-in also work.
