This Crockpot Chicken Green Beans and Potatoes comes together quickly using just four simple ingredients. It is a great recipe for kids to make, because it is so simple! It is a tasty favorite in our family, and the ultimate FAST one-pot meal for working moms.

I have an Instant Pot and an air fryer and they are both great tools, (like this Delicious IP Venison Roast) but I am still a huge fan of the lowly crockpot. Throw some ingredients into it in the morning and come home to a warm, bubbling meal... the best thing in meal prep! One of my other fave crockpot meals is my popular Slow-Cooker Elk Stew.

Key ingredients

Chicken Thighs. Use bone-in or boneless. DO NOT use chicken breast, as they will cook too fast and be too dry. Thighs create a delicious broth that will help cook the vegetables.
Green Beans. I use frozen ones for convenience, but you can use fresh if you like.
Baby Potatoes. I like the red baby potatoes, but you can use yellow or purple.
Italian Dressing mix. Any brand will work. Just the dry mix - not the prepared dressing.

How to make easy chicken crockpot dinner

Easy chicken crockpot meal.
  1. Step 1: Place the chicken in one side of the crockpot. You have to make two layers of chicken, and squish the pieces tightly together.
  1. Step 2: Carefully place the green beans in one corner, and  add the potatoes in the other corner. It will be full! Don't worry - the chicken and beans shrink a lot during cooking.
  1. Step 3: Then, sprinkle the packet of Italian seasoning over the chicken and vegetables. Lift the top pieces of chicken and sprinkle some seasoning on the bottom layer.
  1. Step 4: Put the lid on and cook on high for 4 hours. The chicken will make it's own juice - no need for liquid, I promise!

Tips for Chicken and green beans crockpot

I like to use the baby potatoes, but you can use any potatoes. Just chunk them up and place them in the crockpot.
I have used frozen and fresh green beans. Either one works just fine. You can also use carrots instead of green beans.
Boneless chicken thighs are my favorite, but bone-in also work.

  • 1 bag baby potatoes
  • 1 bag green beans fresh or frozen, 12 oz
  • 1 packet Italian Seasoning

  • Place chicken, potatoes, and green beans in crockpot.
  • Sprinkle seasoning over top. Make sure to get some seasoning on each chicken piece.
  • Cook on high for 4 hours.
