Sweet BBQ Beef Mini Meatloaves (Easy Skillet Recipe)

These sweet BBQ beef mini meatloaves are a quick and tasty skillet recipe. My family really enjoys when I make these mini meatloaves! I guess they could also be called beef patties, since I make them more patty-shaped than loaf-shaped! Either way, they are delicious. They are smothered in a sweet onion sauce which goes well with mashed potatoes or rice.

How to make Sweet BBQ Beef mini-meatloaves

First, slice an onion and set aside for later. You could dice the onion as well, but we like it sliced. 

Next, stir the sauce ingredients together in a bowl or measuring cup. Set it aside for later. 

Now, mix the ground beef, salt, and pepper. Form the meat into small, flat loaf shapes.  

When you have the beef all shaped, fry the mini-meatloaves in oil or butter, in a large skillet over medium heat.

When the meat is fully cooked, place the loaves (or patties) into a serving bowl and cover to keep warm while you make the sauce.

Into the same pan, add some butter and the onions. Turn the heat down to medium-low, and sauté the onions till they are starting to soften.

Add the sauce and stir all the browned bits up as the sauce bubbles. The browned bits on the bottom of the skillet will add a lot of great flavor to the sauce.

Pour the sauce and onions over the cooked mini-meatloaves, and it is ready to serve!

This has been one of my husband's favorite meals for a long time. The sauce is a bit on the sweet side for me, but it is really good! We like to serve it with potatoes or plain cooked rice. Add a fresh spinach salad and perhaps a bright fruit salad, and it will be a wonderful meal!

Ingredients
  

  • 1 lb ground beef
  • ¼ cup dark Karo or maple syrup
  • 6 Tablespoons steak sauce or BBQ sauce
  • 6 teaspoons mustard
  • 1 onion sliced
  • 1 TBL butter
  • 1 teaspoons salt
  • ½ teaspoon pepper

Instructions
 

  • Mix the karo, steak sauce, and mustard together, set aside.
  • Slice onion and set aside for later.
  • Mix ground beef with salt and pepper, shape into 8 patties.
  • Fry over medium heat until fully cooked.
  • Remove to covered serving plate, keep warm.
  • Put butter in frying pan and turn heat to medium-low.
  • Add onions to butter, stir and fry till beginning to soften.
  • Add sauce and stir up all the browned bits and let bubble for 1-2 minutes.
  • Pour sauce over mini-meatloaves and serve hot.

Notes

You may substitute maple syrup or honey for the Karo if you want a healthier version.
You can use venison instead of beef in this recipe.
Add some red pepper flakes or sriracha for a spicy punch!

    What a great idea! The kids would love this one! I like the addition of the onions sauteed in the sauce. Yum!
